In one of the first stages in the process of making Maker's Mark bourbon, the distillers create a mix of corn, red winter wheat, and malted barley and put it all in this roller mill, where it is crushed into a powder that's blended with spring water in the mash tubs. The idea is that by gently crushing the powder and then cooking the mash, it makes the sugars in the mix easier to access.
